I've never done it, so I can't be sure, but simply turning the night sky into day sky should be no problem. Try to open the track in SB and go to Adjust>Track Lighting Options... and uncheck the box next to "Night Track".
Other than that, I imagine you'd have to "turn off" the track lights (both the visuals and the effects they have on the cars). Also, any texture like those used in horizons would have to be "lightened up".
